Recipe: Garlic and fennel pasta

WITH CHILLI AND PARMESAN

Garlic and fennel pasta - serves four
What you'll need:
400g of tagliatelle
1 large fennel bulb with stems
Half a head of garlic
Chilli flakes
1 tbsp of butter
50g of grated parmesan
Salt and pepper to season
Olive oil
What to do:
Step 1 Start by boiling a pot of salted water and adding the tagliatelle.
Step 2 Chop the fennel in half, separating the stem from the bulb. Pick the leaves off the stem and leave them aside for seasoning. Cut the bulb again and begin slicing to get ‘half moons’.
Step 3
Start by frying the chopped fennel lightly in some olive oil. While it is frying, chop the half head of garlic into small chunks.
Step 4 Once the fennel is translucent and soft, put the garlic and chilli flakes in the pan.
Step 5 Once the pasta is done, drain the starchy water while reserving some in a cup. Put the pasta in the pan with the fennel.
Step 6
Mix the pasta with the ingredients, adding the butter, olive oil and starchy water. Season with salt and pepper to taste. Then add the parmesan, thoroughly combine the ingredients.
Step 7 Garnish with more grated parmesan, a grind of pepper and fennel leaves.
